Brought up in and around restaurants and bars, Tom Egerton has spent the better part of a decade working and travelling around the world to develop an international perspective on the hospitality industry.
Most recently Tom was bar manager of Sydney's award-winning Eau de Vie bar where he
developed concept cocktails and drove a team collaboration culture to create unique, original drinks and a diverse range of premium spirits education packages. Prior to this, Tom’s resume includes stints in bars, hotels and kitchens in North America, Ireland, Dubai, New Zealand and Australia. His work with global spirits brands has taken him to bars in Tokyo and Havana to name a few, as well as every bar in between in search of inspiration and the perfect mix of fine spirits and hospitality for the modern cocktail connoisseur.
Tom has also worked with both local and international brands on a variety of projects, from developing education platforms and leading in-depth local market research to working with food scientists and hosting consumer workshops.
After years of formal tie-and-waistcoat speakeasy-style bartending, Tom has hung up his arm garters and traded them for something a little more tropical.
